Why it's good for you

Freekeh is an ancient grain harvested young, which gives it more protein and fiber than most grains. Blackberries contribute polyphenols associated with reducing inflammation, while Swiss chard adds magnesium and vitamins K and A.

Ingredients

  • 2 cups cooked freekeh, cooled
  • 1 cup fresh blackberries
  • 1½ cups chopped Swiss chard
  • ¼ cup slivered almonds
  • 2 tablespoons olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Steps

  1. Add the freekeh, blackberries, Swiss chard, and almonds to a large bowl. Mix to combine.
  2. Drizzle with olive oil and lemon juice, then toss until everything is well coated.
  3. Season with salt and pepper. Serve at room temperature.
