Ferment
To break down substrates anaerobically to yield reduced products and energy.
Anaerobic catabolic process in which microorganisms (or muscle, briefly) regenerate NAD+ by reducing pyruvate or other intermediates, producing lactate, ethanol, short-chain fatty acids, or gases.
