Lyases
Enzymes that cleave carbon-carbon, carbon-sulfur, and certain carbon-nitrogen bonds without hydrolysis or oxidation-reduction.
EC class 4 enzymes (e.g., aldolase, fumarase, citrate lyase) that break bonds by mechanisms other than hydrolysis or redox, often generating a double bond.
